    • toasted pine nuts, and basil air (basil, parmesean, air)
  3. Kobe Beef Carpaccio
    • Kobe Beef Carpaccio topped with smoked olive oil,
    • smoked sea salt, parmesean, and fried basil.
    • Served with Montrachet Cream (goat cheese), and truffle oil.
  4. Crispy Soft Shell Crab Roll
    • Crispy Soft Shell Crab Roll topped with salmon poke.
    • Served with Chili Soy Vinaigrette.

    • Trio of Kumamoto Oysters in a West Indies Ceviche -

    • Mushroom Stock, roasted leeks, potatoes, garlic, shallots,
    • and cream. With 2 clams, 2 mussels, and 3 scallops.
    • Served with a large garlic toast point.
  8. Hickory Smoked Trout Salad
    • Cold, hickory smoked Trout, with chives, salad greens,
    • fuji apple chips in simple syrup, crispy somen
    • noodles in togarashi, port salut (cheese), & Essence
    • of Rau Ram dressing (vietnamese cilantro (spicy))
  9. Grilled Romaine Caesar Salad
    • Romaine lettuce, grilled Tiger Prawns, and Chinese black
    • bean corn salsa. Served with Caesar dressing.
