  1. Sucrose made of:
    Sucrose is a DI-saccharide mare from the mono-sacchardies: FRUCTOSE and GLUCOSE

    • Carries a NEGATIVE CHARGE
    • This charge allows it to act with its primary function: ACT AS a buffer
    • 1. Neg charge allows the + charges (Mg and Ca) to be attracted to it
    • 2. Reduces ability of HIGHLY charged particles to move thru membrane
  4. Glycemic index
    • Shows INSULIN response
    • If diabetic, it will take much longer for glucose levels to get back down
    • Normally, after a meal, glucose is up, then by 90MIN it is back to normal levels
  5. Diabetes cause
    • Open chain GLUCOSE, specifically the aldehyde is the problem
    • This aldehyde reacts with NH2 of an AA to form SCHIFF Base
    • This SCHIFF Base can CONVERT to AMADORI Product --> which rearranges to the ADVANCED GLYCATION END PRODUCT (AGE)
    • AGEs cause rigid limbs and blood vessels, causing loss of limbs
  6. Schiff Base order of kinetics and how fast Amadori products are generated
    • 2nd order
    • 1/2 life of 2hrs, so by 6 hrs its gone from the blood
    • Schiff base REARRANGEMENT to Amadori product: takes WEEKS, so if you're not diabetic, Schiff Bases are not a concern for you
