Sensible heat. Heat is applied to room temperature water. The temperature of the water rises. This is called sensible heat.
Sensible heat causes a change in temperature.
Latent heat. As the water reaches the saturation temperature (in this case 212 degrees Fahrenheit), the temperature stops rising, even though heat is still being applied. At this point, the water is changing state from a liquid to a gas (steam). The temperature remains constant until all the water has vaporized.
