    • 4. 320˚F caramelize
    • 5. Honey colored
    • 6. Plunge in ice water
  2. Preventing Sugar Crystallization
    • 1. Clean pot/utensils
    • 2. Uncontaminated sugar
    • 3. Add acid or invert sugar
    • 4. Once boils no stirring
    • 5. Skim scum
    • 6. Wash sugar crystals from sides of pot
    • 7. Don’t touch solution with brush
  3. Precautions
    • 1. Emphasize danger
    • 2. Ice water nearby
    • 3. Stay focused
    • 4. No horseplay
