  2. Scombroid Poisoning
    Produces histamines, red face, headache, sweating, diarrhea and vomiting. Found in tuna, mackerel, mahi mahi and bonito.

    Prevent time and temperature abuse.
  3. Ciguatera Fish Poisoning (Ciguatoxin)
    Symtoms can last from months to years. Hot and Cold flashes, nausea, vomiting, tingling, joint and muscle pain. Found in barracuda, grouper, jacks and snapper.
  4. Illness caused by Shell Fish toxins
    • Paralytic Shellfish poisoning
    • Neurotoxic Shellfish poisoning
    • Amnesic Shellfish poisoning

  5. Paralytic Shellfish poisoning
    Symptoms: numbness; tingling in the mouth, face, arms and legs; dizziness; nausea; vomiting and diarrhea. Death from paralysis if not treated.

    Found in clams, mussels, oysters and scallops.

  6. Neurotoxic Shellfish poisoning
    Symptoms: tingling of the lips, tongue and throat; vomiting and diarrhea.

    Found in: clams, mussels, oysters and scallops.

  7. Amnesic Shellfish Poisoning
    • Early Symptoms: vomiting, abdominal pain and diarrhea.
    • Late Symptoms: confusion, memory loss, disorientation and seizure that leads to a coma.

    Found in: clams, mussels, oysters and scallops.

  9. Bacillus Cereus Gastroenteritis
    Infection of gastrointestinal system (fried rice syndrome)

    Symptons: diarrhea and vomiting

    Found in: cooked vegetables, meat, milk and cooked rice.

    Prevention: Store, cook and cool food at proper temperature
  10. Listeriosis
    Symptoms: miscarriage, pneumonia, menegitis and sepsis

    Found in: raw meat, unpasteurized dairy and ready to eat foods - such as hot dogs, cheese and deli meat

    Prevention: discard expired food
  11. Hemorrhagic Colitis
    Also known as E. Coli

    Symptoms: diarrhea, abdominal cramps and kidney failure

    Found in: ground meats contaminated during slaughtering and contaminated produce

    Prevention: cook food at proper temperatures and buy from reputable distributors
  12. Clostridium Perfringens Gastroenteritis
    Symptoms: diarrhea and severe abdominal pain

    Found in: Soil, meat, poultry, stews and gravies contaminated by bacteria from animal and human intestines

    Prevention: cool, reheat and store food at proper temperatures
  13. Botulism
    Symptoms: nausea, vomiting, weakness and difficulty swallowing. Death can occur if left untreated

    Found in: incorrectly canned foods, reduced oxygen foods, baked potatoes, garlic and oil mixtures that are contaminated by spores in water and soil.

    Prevention: Inspect canned goods for dents and store, cool and reheat food at proper temperatures
  14. Salmonellosis
    Symptoms: diarrhea, abdominal cramps, vomiting and fever

    Found in: Poultry, eggs, dairy and produce

    Prevention: Store, cool and heat at proper temperatures. Employees with salmonella are not allowed in establishment
  15. Shigellosis
    Symptoms: bloody diarrhea, abdominal pain and occassional fever

    Found in: wet salads - potato, tuna, shrimp and chicken (all have mayo) contaminated by contact with contaminated water and human feces, flies and unwashed hands transfer it.

    Prevention: wash hands, control flies and keep employees with diarrhea or shigellosis out of establishment
  16. Staphylococcal Gastroenteritis
    Symptoms: nausea, vomiting and abdominal cramps

    Found in: salads and deli meats (infection located in hair nose and throat of humans)

    Prevention: Wash hands, cover wounds and store, cool and reheat food properly
  17. Vibrio Vulnificus Primary Septicemia
    Symptoms: diarrhea, abdominal cramps, nausea, vomiting, low fever and chills. Causes death if left untreated

    Found in: oysters and contaminated waters

    Prevention: cook food properly
  18. Vibrio Vulnificus Gastroenteritis
    Symptoms: diarrhea, abdominal cramps, nausea, vomiting, low fever and chills.

    Found in: oysters and contaminated waters

  19. Virus caused Food Borne Illnesses
    Hepatitis A

    Neurovirus
  20. Hepatitis A
    Symptoms: mild fever, weakness, nausea, abdominal pain and jaundice (no permenant liver damage)

    Found in: shellfish and ready to eat food contaminated by human feces

    Prevention: wash hands, buy from reputable dealers, do not allow employees with jaundice or hep A in facility (notify Board of Health). COOKING DOES NOT KILL
  21. Neurovirus (Norwalk)
    Symptoms: vomiting, diarrhea, nausea and abdominal cramps. (contaigous in a few hours)

    Found in: shellfish and ready to eat food that has been touched by feces

    Prevention: wash hands, only buy from reputable sources and do not allow employees with diarrhea or neurovirus in establishment.

    Found in: undercooked fish - such as herring, cod, halibut, mackerel and pacific salmon

  24. Cryptosporidiosis
    Symptoms: diarrhea, abdominal cramps, nausea and weight loss

    Found in: Water and produced contaminated by human feces, mostly appears in daycares and medical facilities

    Prevention: properly treat water, wash hands and do not allow employees with diarrhea in facility
  25. Giardiasis
    Symptoms: fever, diarrhea, abdominal cramps and nausea

    Found in: contaminated water and produce

    Prevention: properly treat water, wash hands and do not allow employees with diarrhea in facility
