    • 1. Champagne flute glass
    • 2. 1/2 filled Champagne
    • 3. 1/2 filled orange juice

    *common brunch drink
  2. Bellini
    • 1. Champagne flute glass
    • 2. In Mixing Glass
    • **-add 1 barspoon of white peach puree
    • **-Splash of Champagne
    • **-Stir w/barspoon
    • 3. Pour Champagne in flute glass
    • 4. Pour Champagne/puree mix over it
  3. Simple Bellini
    • 1. Champagne flute glass
    • 2. 1/2 filled Champagne
    • 3. 1/2 filled peach necatr
  4. Ghetto Bellini
    • 1. Champagne flute glass
    • 2. Almost filled w/Champagne
    • 3. Top w/Peach Schnapps
  5. Caipirinha ("Kaiprenya")
    • 1. Highball Glass
    • 2. Muddle 3 lime wedges
    • 3. 3 barpoons of Sugar
    • 4. Splash of water
    • 5. Muddle again
    • 6. Fill w/ice
    • 7. 1.5 oz Cachaca*
    • 8. Shake well
    • 9. Fill w/soda

    *a cane liquor, pronounced "cashasa"

    • HINT:
    • - same as mojito except no mint and cachaca instead of rum
  6. Mojito
    • 1. Collins/Mixing Glass (or Highball)
    • 2. Muddle 3 lime wedges & 3 mint leaves
    • 3. 3 barspoons of sugar
    • 4. Spash of water
    • 5. Muddle again
    • 6. Fill w/ice
    • 7. 1 oz Light rum
    • 8. Shake well
    • 9. Fill w/soda

    *many establishments will use a pre-mix
  7. White Wine Spritzer
    • 1. White Wine Glass
    • 2. 1/2 filled w/White Wine*
    • 3. 1/2 filled w/soda
    • 4. Garnish w/Lemon Twist

    • *house wine, Chardonnay, Pinot Grigio, Sauvignon Blanc, unless customer specifies
    • *may also be called for w/Red Wine
  8. Kir
    • 1. White Wine or fluted glass
    • 2. White Wine
    • 3. <1/2 oz Creme de Cassis*

    *blackberry flavored cordial made from black currants

    • NOTE:
    • Do NOT overpour Cassis, just enough to give color, but remain clear
  9. Old Fashioned
    • 1. Highball Glass
    • 2. Add 2 Cherries
    • 3. Add 1 Orange Slice
    • 4. Add 2-3 Dashes of Bitters*
    • 5. Add 3 barspoons of Sugar
    • 6. Spash of water (just enough to coat bottom of glass)
    • 7. Use tapered side of muddler to crush all ingredients
    • 8. Fill w/ice
    • 9. 1 oz Whiskey
    • 10. Shake well (Tall Shaker) so that it becomes like a slushy
    • 11. Fill w/soda

    *Angostura - made from tree bark, herbs and spices, 45% alcohol
  10. Kir Royale
    • 1. Champagne flute glass
    • 2. Fill w/Champagne
    • 3. Top w/Chambord*

    *Thick, sweet, raspberry cordial

    • NOTE:
    • Pour just enough to give color, ~1/3 oz
