Chap 15 - Carbohydrates
The simplest carbohydrates are:
Monosaccharides
A disaccharide is:
Two monosaccharide units joined together.
Photosynthesis:
Process by which energy from the sun bonds CO2 and H2O to form Carbohydrates glucose.
Respiration:
Process by which glucose is oxidized to release chemical energy producing CO2 and H20.
Aldose: Aldehyde group:
The carbonyl group is on the first Carbon: ---CHO
Ketose: Ketone:
Carbonyl group is on the second Carbon atom: C===O
Glucose + Glucose =
Maltose (Reducing sugar disaccharide) + HOH.
Glucose + Fructose =
Sucrose (Disaccharide) + HOH.
Glucose + Galactose =
Lactose (Reducing sugar disaccharide) + HOH.
Amylase = 20% of starch
Alpha D-Glucose molecules connected by Alpha 1,4 glycosidic bond (straight).
Amylopectin = 80% starch
Start out with Alpha 1,4 glycosidic bonds then at about 25 glucose units, Alpha 1,6 glycosidic bond.
Glycogen = Animal starch highly branched
Alpha 1,4 glycosidic bonds and at about 10 to 15 glucose units attached by alpha 1,6 glycosidic bonds.
