Brewing Batch Iced Tea
- One bag of Sysco and 1 oz South Sea Magic
- Pour Teas into the Bottom of a 1 Gallon Container
- Fill Up White Water Kettle ( 32 oz) with water, bring water to a boil
- Pour the hot water over the loose tea
- Steep for 4-5 minutes
- Strain tea through a coffee filter into Iced Tea Dispenser.
- Add 64 oz of room temperature water
- Add 32 oz of ice

Brewing Individual Tea
- Hot Tea:
- Little: 1 scoop
- Big: 2 scoops
- Scoop tea into unbleached tea bag
- Sandwich flap between 2 paper hot cups
- Spritz tea bag with hot water from espresso machine
- Top cup off with water from coffee brewer
- Warn customer of temp
- Iced Tea:
- Little: 1 scoop
- Big: 2 scoops
- Place tea bag into glass measuring cip or ceramic mug
- Cover with boiling water
- 2 oz for Little, 3 oz for Big
- After 3 minutes, pour tea concentrate over the proper sized cup filled with ice

Frizzan Tea
- Boil 40 oz of hot water
- Place coffee filter on scale
- Tare scale to weight of filter
- Measure 1.75 oz of tea
- Put tea in metal brewing pot
- Let step for 2 minutes only * use timer*
- Put two cups of ice into bottom of square Cambro container
- Using a strainer lined with coffee filter, strain tea into Cambro
- Decant cooled tea into glass display container
